Ingredients
Required Ingredients:
2 medium zucchini, shredded
2 medium carrots, shredded
1 medium sweet potato, peeled and shredded
1 small onion, finely grated or shredded
2 eggs
1 ts of garlic powder
1/4 to 1/2 cup flour of choice (whole wheat, chickpea, almond, etc.)
Place the shredded vegetables in a clean kitchen towel and squeeze out excess moisture.
Transfer to a large bowl. Add eggs, turmeric, ginger, salt, and pepper. Mix well.
Gradually add flour until the mixture holds together — start with 1/4 cup and increase if needed.
Heat coconut oil in a skillet over medium heat.
Scoop 2–3 tablespoons of mixture per fritter, flattening them in the pan. Cook 3–4 minutes per side until golden and crisp.
Remove to a metal rack and add sea salt and repeat with remaining mixture.
