2 lbs ground beef (80/20 or 85/15 for best texture)
2 eggs
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon dried or fresh parsley
1/4 of a small onion, finely grated
2 garlic cloves, finely minced
1/8 cup water
1 slice of sourdough bread, torn or crumbled (optional)
Optional to Elevate Flavor:
A pinch of chili flakes or fennel seed

Steps
Preheat oven to 350°F (175°C).
In a large bowl, combine beef, eggs, salt, pepper, parsley, grated onion, garlic, water, and optional bread. Mix gently by hand until just combined — don’t overwork.
Use an ice cream scoop to form even-sized meatballs.
Heat a heavy skillet (cast iron preferred) over medium-high heat and add beef tallow or avocado oil.
Sear meatballs on two sides until browned, about 2–3 minutes per side.
Transfer the skillet or move meatballs to a baking sheet and finish in the oven for 5 minutes.
Let rest for 2–3 minutes before serving.
