  • 2 lbs ground beef (80/20 or 85/15 for best texture)
  • 2 eggs
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried or fresh parsley
  • 1/4 of a small onion, finely grated
  • 2 garlic cloves, finely minced
  • 1/8 cup water
  • 1 slice of sourdough bread, torn or crumbled (optional)

Optional to Elevate Flavor:

  • A pinch of chili flakes or fennel seed
  • Swap parsley for basil or oregano
  • Add 1 tablespoon grated parmesan for extra umami

Steps

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine beef, eggs, salt, pepper, parsley, grated onion, garlic, water, and optional bread. Mix gently by hand until just combined — don’t overwork.
  3. Use an ice cream scoop to form even-sized meatballs.
  4. Heat a heavy skillet (cast iron preferred) over medium-high heat and add beef tallow or avocado oil.
  5. Sear meatballs on two sides until browned, about 2–3 minutes per side.
  6. Transfer the skillet or move meatballs to a baking sheet and finish in the oven for 5 minutes.
  7. Let rest for 2–3 minutes before serving.
