Easy Vegetarian Salad Recipe with Romaine, Avocado, and Parmigiano

This simple but elevated Italian-style salad brings together crisp romaine, tender blanched asparagus, roasted pistachios, and shaved Parmigiano Reggiano. It’s light, fresh, and full of texture. It’s a perfect as a starter, main dish or side.

I’m totally obsessed with this salad. It’s refreshing, satisfying, and honestly never gets old. I always have these ingredients in my fridge: romaine, asparagus, avocado, and lemon, so it ends up on our dinner table at least once a week. Between the creamy avocado, the crunch from the pistachios, and the brightness from the lemon dressing, it’s the kind of salad you actually crave.

Ingredients

Required Ingredients:

  • 1 large head of romaine lettuce, chopped or torn
  • 1 bunch of asparagus, woody ends trimmed
  • 1 large avocado (cubed or long slices)
  • 1/4 cup roasted pistachios (lightly salted or lemon flavored!)
  • 1/4 cup shaved Parmigiano Reggiano
  • 1/2 Tsp Freshly ground black pepper (to taste)
  • 1 Tsp kosher salt

Optional to Elevate Flavor:

  • fresh herbs such as cilantro or parsley

Steps

  1. Bring a pot of water to a boil. Blanch the asparagus for 2–3 minutes until just tender but still crisp. Transfer to an ice bath or run under cold water to stop cooking. Slice into 1–2 inch pieces.
  2. In a large bowl, combine romaine, blanched asparagus, avocados and roasted pistachios.
  3. Toss with lemon olive oil dressing (recipe), top with shaved Parmigiano Reggiano, and finish with extra black pepper if desired.
  4. Serve immediately.
