Required Ingredients:
2¼ tsp (1 packet) active dry yeast
1 tsp sugar
¾ cup warm water (about 110°F)
1½ cups all-purpose or bread flour (plus more as needed)
½ tsp salt
1 tbsp olive oil
Optional to Elevate Flavor:
1 teaspoon of garlic powder
1 teaspoon of fresh rosemary
Steps
Activate the yeast: In a large bowl, combine lukewarm water, yeast, and sugar. Stir gently and let it sit for 5–10 minutes until foamy.
Mix the dough: Add flour, salt, and olive oil. Mix with a spoon until a shaggy dough forms.
Knead: Knead by hand (or mixer with dough hook) for 8–10 minutes until the dough is smooth and slightly tacky.
First rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for 1 hour or until doubled.
Shape: Punch down and divide the dough into 4–6 equal pieces. Roll into balls, cover, and let rest 10 minutes.
Roll out: Roll each ball into a round about ¼ inch thick.
Preheat oven to 500°F: Place a heavy baking sheet or pizza stone in the oven as it preheats. Let it get very hot, this helps the dough not stick and puff.
Bake: Place 1–2 rounds at a time onto the hot surface. Bake for 1–2 minutes, then quickly flip as soon as it puffs. Bake 1 more minute on the other side.
Wrap to keep soft: As soon as the pitas come out, wrap in a clean kitchen towel to keep warm and pliable.
