Ingredients

Required Ingredients:

  • 2 medium zucchini, shredded
  • 2 medium carrots, shredded
  • 1 medium sweet potato, peeled and shredded
  • 1 small onion, finely grated or shredded
  • 2 eggs
  • 1 ts of garlic powder
  • 1/4 to 1/2 cup flour of choice (whole wheat, chickpea, almond, etc.)
  • 2 tsp Salt and 1/2 tsp pepper
  • Coconut oil for frying
  • Sea salt for after frying

Optional to Elevate Flavor:

  • 1 tablespoon fresh grated ginger (or 1 tsp ground)
  • 1 tablespoon fresh grated turmeric (or 1 tsp ground)

Steps

  1. Place the shredded vegetables in a clean kitchen towel and squeeze out excess moisture.
  2. Transfer to a large bowl. Add eggs, turmeric, ginger, salt, and pepper. Mix well.
  3. Gradually add flour until the mixture holds together — start with 1/4 cup and increase if needed.
  4. Heat coconut oil in a skillet over medium heat.
  5. Scoop 2–3 tablespoons of mixture per fritter, flattening them in the pan. Cook 3–4 minutes per side until golden and crisp.
  6. Remove to a metal rack and add sea salt and repeat with remaining mixture.
