Simple Lemon Vinaigrette Salad Dressing (Healthy & Homemade)

This bright, zesty dressing is a staple in my kitchen. It’s made with just a few pantry items and takes less than 2 minutes to whisk together. Perfect for my Easy Vegetarian Salad Recipe with Romaine, Avocado, and Parmigiano Recipe.

I sometimes literally only have lettuce and parmigiana cheese and it still tastes like I make an intentionally delicious salad. I make a big batch in a bottle and just leave it on the counter. It could last for weeks if you let it.

Ingredients

Required Ingredients:

  • 1/2 cup high-quality extra virgin olive oil
  • Juice of 1 whole lemon (about 2–3 tablespoons)
  • Generous pinch of kosher salt (start with 1/2 teaspoon, adjust to taste)
  • Freshly ground black pepper, optional

Optional to Elevate Flavor:

  • I’d say nothing for this one but if you want it a bit creamy – add 1 tsp of dijon mustard

Steps

  1. In a small bowl or jar, combine the lemon juice and kosher salt.
  2. Slowly whisk in the olive oil until well combined.
  3. Taste and adjust salt if needed. Add black pepper if using.
Pro tip!

Sometimes I add more lemon juice, depending on my taste buds that day!
